Description: The project proposes the improvement of a functional prototype for the identification of fine cocoa flavors, which emulates the human tongue through the Electronic Tongue device that appropriately couples low-selectivity chemical biosensory arrays with chemical-analytical analysis tools that provide the correlation and classification of flavors that have a similar measurement composition. In order for the prototype to provide sufficient efficacy under real-life conditions of use, it is required that the statistical methods of chemometrics must be refined until they can infer information on properties and particularities that allow chemical interpretation with sufficient significance.

Benefits: increased efficiency in the generation and strengthening of new high-quality products, providing high value for their application in different companies in the food and beverage sector.
